Snow Pudding
Light and fluffy whipped gelatin with a custard sauce.
Ingredients:
Snow Pudding Base | Custard Sauce |
1 Package Knox Gelatin (1 Tablespoon) | 3 Egg Yolks |
1/4 cup Cold Water & 1 cup Boiling Water | 1/4 cup Sugar |
1/4 cup Lemon Juice | 1/8 teaspoon Salt |
1/4 cup Sugar | 2 cups Milk |
3 Egg Whites | 1 teaspoon Vanilla flavoring |
1/4 teaspoon Salt |
Preparation:

- Soak gelatin in 1/4 cup cold water for 5 minutes in a glass bowl.
- Pour 1 cup boiling water over the gelatin to dissolve it.
- Stir in the Sugar until it is completely dissolved.
- Stir in the Lemon Juice.
- Chill the mix until it falls in sheets from a spoon.
- Whip the Egg Whites with the Salt until stiff.
- Whip the semi-jelled mix into the Egg Whites.
- Beat until the mixture begins to stiffen.
- Pour into serving bowl and chill thoroughly.

- Scald the Milk and set aside.
- Beat the Egg Yolks slightly to loosen.
- Beat in the Sugar and Salt.
- Slowly stir in the scalded Milk.
- Cook over a low flame or in a double boiler
- Stir constantly until thickened.
- Stir in the Vanilla. Chill thoroughly.
- Pour over servings of Snow Pudding
